Olives are harvested in the green to purple stage. Canned black olives may contain chemicals (usually ferrous sulfate) that turn them black artificially.

Haha. Hence why I buy my BLACK olives in bulk at Sam’s Club. They don’t bulk sell the green ones. Yet another reason why black olives > green olives. :-D
When something is of lesser quality or not in as much demand they usually try to sell it off in bulk before it goes bad….black olives
